Przyszły do nas takie czasy, kiedy unikamy spacerów do piekarni, a drożdże ze sklepowych półek znikają w oka mgnieniu. Dobrym sposobem jest mrożenie chleba, jednak kiedy i te zapasy się skończą, można w domowym zaciszu ulepić zamiennik, który nie wymaga zbyt wielu składników, ani czasu.
Proziakami nazywamy chleb sodowy, pochodzący z Podkarpacia, znany w różnych regionach Polski. Pewnie wiele babć kojarzy je jeszcze z dzieciństwa. Kiedyś wypieki chleba miały miejsce raz w tygodniu, dlatego zaradne gospodynie domowe stworzyły ulepek zamienny, który posmarowany masłem cieszy podniebienie i śniadaniowe stoły po dzień dzisiejszy.
Przypominam, że moje przepisy nie zawierają glutenu, można natomiast zawsze mąkę, którą ja wybrałam zastąpić zwykłą pszenną.
Składniki (porcja ok. 25-30 proziaków wielkości dłoni)
- 500g mąki kukurydzianej (można użyć pszennej lub żytniej)
- 750 ml kefiru
- dwa jajka
- 1/2 łyżeczki sody oczyszczonej
- 1 łyżeczka soli himalajskiej
- 1 łyżeczka cukru
- mąka do podsypywania
- Wszystkie składniki dokładnie zmieszać, powstałe ciasto przełożyć na stolnice i odrywać małe kawałki.
- Oderwane kawałki formować w kuleczki, następnie wałkować placki o grubości ok 1cm.
- Placki podpiekać na nagrzanej, suchej patelni, podpiekać z obu stron aż się zarumienią.
